Hollandaise sauce is soooo hard to get that balance right 🥇👍
Its from a mix. Never had the patience or guts to try it from scratch.

Its called SAP. I remembered that a little wrong. It comes with jalapeños and a cilantro lime hollandaise. I looked up the menu because i though they had (they do) a salmon Benedict that my wife loves.

For lunch today, I cooked some walleye in my air fryer. I have never cooked fresh fish in it before, so I wasn't sure how it would turn out. It turned out great. Very delicious. Just a light spray of olive oil cooking g spray and some "fish grilling" seasoning that I had, and tastes delightful.

My only complaint is that whoever filleted this meat did not get all of the rib bones out.

Can I laugh for about an hour? To warm??????? It is warm here, at 3 pm it was 97 F (36.1 C) and we still like to cook!

The smoothie sounds delicious.

But seriously, YOU have AC blasting all around the house, so in all reality it is more like 65 F where you actually live, we don’t have AC (know it, just don’t have it) around here and yesterday afternoon it was 86 F - IN MY KITCHEN!

The problem with these is that to be effective they have to have a water tank and/or an "exhaust" for condensation and this makes them not so mobile after all. I am still looking but AM looking. - If I had to start all over I would start a business installing ACs in Germany. This is the future, sad but true ...

This is actually what I am not eating, since I am supposed to avoid red meat. My kids need protein and my wife has no health concerns, so we keep beef in our diet and I frequently eat a different meal from the rest of the family.

Today was the day to pick up our side of beef. With a large family (8 of us) we go through a lot of food and buying bulk saves time and money.

Living in a state with a lot of agriculture has its advantages. High quality, no hormone, grass fed beef for $3 and some change per pound is a bargain compared to the ridiculous prices at the supermarket right now.

We have been buying our beef from the same local beef rancher and having it processed at the same meat locker for 5 years now. I still remember how surprising it was when we bought our first order and I found out how much different naturally raised beef that has been minimally processed is from meat purchased at a supermarket. Different color, different smell, different taste. A lot of the hogs and cattle around here are fed spoiled or rejected material from Quaker Oats and General Mills. The farmers can get it for the cost of transporting it. I never realized how much of a difference diet makes on the flavor of beef until we purchased meat that was raised on a grass diet.

One of the cousins of my ex was still living on the old family farm, and he raised a few heads of beef cattle for family and friends. those animals came out into the pastures in early spring, and were rounded up in late fall to be hauled away to the butcher. ten head of cattle could roam a few hundred acres of best Wisconsin grass.
We got half a cow every fall, ad from he School of Agriculture of the university at which my ex taught, we got half a pig each fall. They gave their pigs to the employees only, and it was the best pork one could think of.
These were the days of plenty!

The last of the pasties we brought home from Madison. This one they call big cheesy with beef. Has a little pizza type sauce also so this one is essentially a calzone.

I am not supposed to eat red meats, and have been finding new ways of getting protein into my diet. I eat a lot of beans and lentils, but nothing beats animal protein. I have always been a fan of fish and with the absence of other meats in my diet, I have become something like a pescatarian.

I have been trying different types of fish, cooking them in various ways to minimize saturated fats. At my office I have a small hot plate with a cast iron skillet, a microwave, and a toaster oven/air fryer combination thing. I found with walleye and trout that the air fryer works great and makes very good tasting, flaky fish that is a little crispy on the outside and tender on the inside.

Today I tried some cod. I sprayed a light spray of olive oil cooking spray on each side and put a thin layer of Italian seasoned bread crumbs on each side.

I didn't have time to thaw the fillet piece. With the walleye and trout I found that 6 minutes on the first side and 4 minutes on the second side gave perfect results. With the cod being frozen, I had to increase the time to 10 minutes on each side at 350 degrees F.

The results were the best cod I have ever eaten. It was perfectly cooked without the greasy mess that fried cod has and not dried out like baked cod can be.

It's a super easy recipe. If you have an air fryer, you should give it a try.
