One of my favorite dishes is grilled chicken breast smothered in Bush's Southern Style White Beans. So Good! I don't know why, but I haven't seen the beans on any grocery store shelves for almost 3 years now. So, I'm going to cook my own from scratch. I've searched online for Bush's recipe, and even offered Duke the famous Golden Retrever a handsome sum of money for it, but since he was kicked off the board for selling Bush's Family Secrets, he's been reluctant to give it up.
I've searched the internet for the perfect recipe, but it's looking like I'll have to mix and match from a couple of different recipes So here goes! First try!
Ingredients:
1 pound bag dried white Northern beans
6-8 cups chicken stock
1 tbsp garlic powder
1 tbsp Cajun or your favorite spicy seasoning
1 tbsp onion powder
2-4 tbsp ground black pepper
Kosher salt to taste (I never use salt, unless I'm cooking pasta)
Instructions:
Rinse beans thoroughly removing any debris.
In a large pot, soak and cover beans overnight (at least 8 hours) with enough water to cover beans by 2-3 inches.
Drain beans and place them back in same pot.
Add enough chicken stock to cover beans by 2-3 inches and add garlic (If desired, add ham, bacon, or other veggies at this time).
Place on medium heat and bring to a simmer and cook for 2-3 hours.
The last half hour, add all other spices and let simmer for an additional 30 minutes.
Serve over grilled chicken breast.
Anyone have a better recipe? I'm looking for some good old fashioned thick and spicy Texas, Arkansas, Louisiana, home cooked country style white bean/Navy bean recipes. You know! Like grandma used to make!
